How to create the perfect choux pastry: 

Create the light, fluffy dough mixture you need for success and stick closely to the prescribed four and water ratio in the recipe below—be careful of adding too much water.  

For pastry consistency and to avoid cracks in the pastry surface, ensure the tip of the piping bag is touching the dough at all times and there are no air bubbles in the piping bag.  

Check to make sure your salmon mousse ingredients have blended through completely – this may take more than one time to achieve the desired smooth consistency. 

Remember excess Nutella cream can be frozen, then thawed, re-beaten and used again later.
