Tips for pavlova success:

Be sure to wash and dry your mixing bowl well before using; grease is a meringues biggest nightmare

Use room temperature egg whites for maximum volume

Use caster sugar for an ultra smooth, silky meringue without any graininess

The Pavlova will be snow white and perfect to top with cream and fresh fruit.
