On top of a soft bed of choux pastry, rests a creamy, espresso filling that will be an instant favourite with coffee aficionados. Iced with an infusion of coffee and sugar, our éclair is an exquisite complement to a long black, a soy macchiato or whichever way you most enjoy your brew.    

How to elevate your éclairs: 

  • Truly impress your coffee-expert friends and find the right coffee. Single-origin coffees can highlight specific flavour profiles that might make your eclairs stand out 
  • Choux pastry has no rising agent other than water and air, and common problems such as pastries being flat, soft or soggy can be avoided by ensuring the dough isn’t too wet 
  • For convenience, make your éclairs in advance and leave them unfilled and refrigerated in an airtight container 2-3 days before you need them.   
  • Remember to squeeze the excess liquid from the gelatin after you remove them from the water.
