Same goes for mushrooms, but be sure to include a healthy amount of porcini mushrooms for their meaty taste.

Steamed Cod
Anyone who has smoked a fish knows that seafood loves indirect heat. A little different from the smoked version, this juicy cod is served in a soup. You’ll need to mix a pickling liquid from five or six green beans, half a chilli, rice vinegar, palm sugar, and a teaspoon of salt. Then, steam the cod fillet using Fullsteam for eight minutes before frying off the soup toppings. The whole dish should only take around 40 minutes.

If anywhere has mastered steam, it’s China. Steamed dumplings have been enjoyed there since before most modern countries were formed, and this traditional recipe pays homage to their art form.
These chicken and water chestnut recipe makes 40 dumplings and is a breeze to prepare. The only trick is making sure your hands are wet when you’re shaping the mixture, making a purse shape if you’re using wonton wrappers, and a going with a standard pinch if using gyoza wrappers.

The maple cake is guaranteed to get messy, so we understand it’s not your first choice when having company over. These individual steamed cheesecakes, however, are a great cocktail dessert.
A mixer will do all the work. Put in cream cheese and sugar, leave until smooth, and then add in cornflower and eggs before a touch of lemon juice, vanilla, and sour cream. Dollop the mix into 10 preserving jars of around 125mls, cover the lids (but don’t seal), and then cook on Fullsteam at 90°C for 16-18 minutes. The crumb then comes from biscuits and melted butter.

Colourful Salad
While the potatoes are steaming, you can tag-team the salad prep. Parsley roots, purple and orange carrots, Chiogga beetroot, and autumn lettuce like endive or chicory combine for a vibrant dish. One person can peel the root vegetables, while the other chops the parsley roots into small cubes and thinly slices the purple carrots and beetroot.

Asian Style Fried Ginger Asparagus
This plate of greens makes for a versatile side dish, this classic Asian recipe is sure to give you an out-of-country experience.
It’s simple, too: a liberal 1.2kg of asparagus is sautéed on medium heat with ginger and butter, and then glazed with sesame oil, oyster sauce and soy sauce. Coriander adds extra dimension, and you can pair with steamed basmati rice to build the meal out.

Asian Chicken Meatballs Soup with Noodles and Vegetables
This one’s a little different. Yes, you’ve had chicken soup, but have you ever opted for juicy chicken meatballs instead of torn strips? If not, here’s how to take your tastebuds to a new land.
Form chicken mince into mouth-sized balls by combining with ginger, chilli sauce, corianders and cornflour. These will be cooked in chicken stock in on FullSteam at 100°C for 10 minutes before veggies, noodles and sauces are added to the mixture and then chucked back in for another two minutes.

Thai Beef Salad
Scrumptious salad, bountiful beef… this dish has the best of both worlds. Using eye fillet and cooking to perfection is key. Luckily, we have the perfect method.
Place the beef on a wire rack over a multi-purpose pan and brush with olive oil. Insert beef on a MultiPoint MeatProbe into the centre of the beef, place on shelf level three, and connect the probe to the oven. Set internal temperature to 54°C and use high steam. When the fillet reaches temperature, allow to rest for 10-15 minutes before slicing thinly.

Twice Cooked Duck with Steamed Asian Greens and Red Rice
If you’re truly missing a taste of the orient, twice cooked duck will cure what ails you.
Our method of steaming first counters duck’s notorious fat levels to make the meat succulent. After you’ve rinsed and dried, stuff with ginger, garlic, and spring onion wedges. Place on a perforated tray and make multiple piercings with a skewer. Then set oven to FullSteam, pop the duck on shelf three above a tray to catch rendered duck fat, and cook at 100°C for 40 minutes.

Pumpkin Soup Variations
Pumpkin soup is a fan favourite for its rustic familiarity and easy assembly. But as with any simple recipe, there’s an art to it. Our classic pumpkin soup recipe involves roasting pumpkin and garlic in a CircoRoast® before chucking it through a food processor and garnishing with basil. But there are also variations that use this as a base.
Spicing up your pumpkin soup will add a welcome zing to the palette. A teaspoon of curry powder adds a touch of the orient, and is optional, but chilli, paprika, and turmeric are a must.
Sometimes, crunch can be just as important as flavour. A sprinkle of pepitas, toasted almonds, pistachios, or a dusting of dukkah will all add important texture while serving as an enticing garnish. To spread that crunch, you can also chop ingredients and mix through.

Winter Meal Prepping with NEFF
Meal prepping might generally be associated with strict diets and the same old salad, but those versions are doing it wrong. In our world, the best meal prepping involves cooking big batches of delicious meals that can stretch over several days.
Whether it’s a roast, stew, or curry, part of the joy of winter meals comes from their scalability. It’s not hard to bulk up ingredients from one dinner and have lunches sorted well into the week — something especially useful with new standards for working from home.

Winter Curries
If you’re looking to master curries, our chicken korma recipe is a great place to start. The standard recipe serves four-six, which you can stretch by doubling the ingredients. Family Sized Pies
If ever there was a time you could chow down on pie without guilt, it’s winter. The meaty version is about as comforting as comfort food gets, but there are a host of ingredients you can get brewing under that pastry lid.
The first on our list is a staple: beef and mushroom pie. The beef mixture in this one incorporates Dijon mustard and star anise and is bound with a little corn flour or tapioca starch. You can use store-bought puff pastry to save time, but doubling the ingredients would call for larger sheets and cooking pots. We advise that you cook double filling but cook your final pies in multiple batches or dishes.
For something a little different and with a lot more greens, our layered vegetable pie is the way to go. Building up slices of overlapped sweet potato and eggplant slices is the trick, and will make for filling, nourishing portions. Home cooks love this one for guests because of the salad topping, which combines shallots, ricotta and basil for an element of freshness. It’s best not to tinker with this recipe’s volume, but with a serving size of six-eight you’ll still have enough for tomorrow’s lunch. Just make sure you save some of the topping too.
Winter Roasts
Roasts are the meal prepper’s favourite dish because they’re so versatile. Instead of going back to the same dish throughout the week, you’re able to take the meat and change it on the fly. Roast chicken salad? Done. Roast beef sandwich? Even easier.
