Oven Baked Prawn and Chorizo Paella
Preheat oven on Circotherm at 160°C.
Place saffron threads into a small bowl, add the water and stir, allow to stand for 5 minutes.
Heat a little oil in a large frying pan over a med-high heat/setting 8 and cook the chorizo for 2 to 3 minutes or until lightly browned. Remove from the pan, drain on paper towel. Toss the chicken in half the smoked paprika, add the remaining oil to the pan then fry the chicken pieces for 3-4 minutes to lightly brown the chicken. Remove and place into 32cm x 28cm deep baking dish with the chorizo.
Add the onion, garlic, capsicum and chilli flakes to the pan and sauté for 2-3 minutes then stir through the saffron, remaining paprika and the rice. Toss over the heat for another minute then add to the baking dish. Pour over the stock and wine and mix well.
Bake using Circotherm with a high level of added steam for 35 minutes, stirring twice during the cooking.
Meanwhile heat the extra oil in the same frypan and cook the prawns quickly over a med- high heat /setting 8 until just cooked. Cool.
Add the prawns and peas to the Paella and bake a further 10 minutes. Toss through the tomatoes and parsley leaves then spoon into serving bowls, garnish with lemon. Serve immediately

How to choose your mangoes
When you get to the supermarket, it can be difficult to know which mango to choose. While many people focus on colour, this is not the best indicator of ripeness. Instead, you should squeeze the mango slightly, as a ripe mango will be slightly soft to touch. You can also tell by the smell of a mango, as ripe ones will usually have a fruity aroma in their stem.
How to store your mango
As a rule of thumb, you should leave mangos that you plan on eating within 24 hours on the bench, while storing the rest of the mangoes in the fridge. This will help them stay fresher for longer and stop them from ripening prematurely.

Why every home cook needs NEFFLight®
One of the things we love about cooking is creating and experimenting with new textures and flavours. But we can’t forget, that at its core, baking is a science with hundreds of chemical reactions taking place throughout the cooking process.
While it can be tempting to keep opening the oven door to check how a dish it coming along, this can be detrimental to the final product. And we all know how devastating it is to spend over an hour preparing a decadent cake, only for it to sink once we take it out of the oven.

How does NEFFLight® work?
Most ovens position their lighting system in the oven cavity, which means light in the oven is obstructed by shelves and pans. But NEFFLight ® uses a specially designed prism located in the oven door to evenly distribute light. This makes it easier to get a good view of everything that is cooking, including the muffin in the very back corner of the oven cavity.

Emerald Deli
Emerald Deli’s owner Maria has been at the helm of this gourmet gem for over 30 years. This Christmas, she recommends using a grazing table to feed your guests. “A grazing table looks amazing on Christmas Day, becoming a feature in the household. You set it up, then let your guests eat as they please. This means you can spend less time in the kitchen, and more time enjoying the festive atmosphere” she says. This year, Maria recommends ensuring you have a good mix of soft and hard cheese, with triple cream cheese and cloth bound cheddar being her favourites. And don’t forget about smoked ham and turkey to make your grazing table look extra full. “To really create a wow factor for guests, make sure you stock up on lots of vibrant, fresh fruit such as juicy strawberries and sweet grapes, using Christmas colours such as red and green”.

Michael from South Melbourne Poultry is an expert in all things chicken and poultry, with a focus of freshness and quality. After all, what is Christmas without the smell of a delicious roast chicken or turkey cooking in the oven. But this year, Michael recommends taking a different approach by purchasing their stuffed chicken rolls, a great alternative to the popular roast. They only take one hour to cook and are pre-stuffed, making it convenient for you to roast and carve up on the day. The chicken rolls come in four flavours, including sundried tomatoes with pistachio and cranberries with chestnut stuffing. “When it comes to Christmas, it’s best to keep things simple and make sure you are prepared ahead of time, so get your orders in before Friday 13 December to make sure you don’t miss out” says Michael.

Ralph’s Meat Company were voted South Melbourne Market’s favourite butcher for a reason. They have been serving up great quality, Australian meat for more than a century and always deliver service with a smile. This year, the team recommends a slow cooked lamb or pork, with meat that melts in your mouth. “When you’re seasoning your meat, don’t go to crazy. Use lemon, oregano, salt and pepper to make sure you are retaining the mouth watering flavours of the meat” the butcher says. It’s best to think ahead and make sure your meat is ordered at least a week in advance. You can get your butcher to put the meat in a vacuum bag, so it stays fresh in your fridge.

Here in the NEFF kitchen, we’re big fans of a soft, buttery pastry - whether that’s a golden puff pastry casing for a beef and mushroom pie, or a sweet pastry case for an apricot danish. It’s a sure way to up your home cooking game and impress your guests.
Follow our secret hacks and habits to improve your pastry handling, and put your NEFF appliances to good use:
Room temperature is the only temperature
Pastry is very sensitive to changes in heat - whether it’s shortcrust for your apple pie or puff pastry for a homemade chicken and mushroom pie. Make sure you’re keeping it cool when not in use, and handling it at room temperature until baking time. The key for lamination with puff pastry or defined layers of butter, so if you handle your pastry while it is too warm you risk melting the butter before it gets a chance to bake.
Brush the surface with egg
A pale pastry never did anyone any good - especially if it’s a buttery puff pastry wrapped around a classic sausage roll. Don’t to forget to whisk an egg and brush your pastries in the golden glaze before placing in the oven. The egg will help crisp the top layer of pastry and give your dough a smooth golden finish.
Try out NEFF’s top/bottom heating function
One of the trickiest things when it comes to the perfect pastry is an even finish. Often, the edges end up overcooked while the base of the dish remains soggy and sticky. Never fear - your NEFF oven is fitted with a top/bottom heating function that distributes the heat of the oven to all sides of the dish. Sour Cream Pastry
Ingredients
1 cup flour
1⁄2 tsp salt
125 g butter, chilled, finely chopped
1⁄4 cup sour cream
Method
Place flour, salt and butter in a food processor or large bowl and whizz, or rub between your fingertips, until mixture resembles crumbs. Add sour cream and continue to blend until the dough starts to incorporate into a ball. Check consistency – if it is still crumbly and does not come together, add a little cold water or more sour cream.
Tip dough onto a sheet of baking paper, pressing it together into a disk or log shape.
Wrap and chill for at least 20 minutes before use. If not using within a week, freeze until needed.
