Top tips for slow cooking in your oven
Whether you want a herby lamb roast that melts in your mouth or an Italian beef casserole that’s packed full of flavour, cooking low and slow can deliver some amazing results with very little effort. Slow cooking in your oven is a method that is easy to master and, if you follow these four simple tips, will turn your mouth-watering recipes into instant family favourites.
1. Always sear your meat first
By searing your meat in a hot pan, the surface areas begin to caramelise, which we can see as it browns. Once you transfer the meat into your oven for its slow cooking time, these caramelised portions will help ensure your recipe is full of rich flavours and deeper colours. If you’re able to brown the meat in the same pan you’ll be using in the oven, you’ll also have a delicious flavour foundation to build your sauce upon.
Cooking tip
The induction cooktop in the new NEFF Flex Design range has a smart Frying Sensor that allows you to choose your exact temperature, so you can get a beautiful caramelisation on your meat before slow-cooking it.
2. Monitor your meat
While we tend to associate low temperature cooking with stews and casseroles where the meat pieces should fall apart at the suggestion of your cutlery, you can also get fantastic results slow cooking larger cuts – such as roasts. To ensure your meat is cooked properly, use a meat thermometer to test the core temperature.
If you have a NEFF oven, your Multi Point Meat Probe can take the guesswork out of the cooking process. Simply insert it into your meat, enter the details of your cut (type and weight) and it will monitor your dish as it cooks to the desired temperature and then will switch to warming mode once the meat is properly cooked.

3. Inject some steam
Don’t worry, adding a little steam to your oven routine doesn’t make your recipes turn soggy. In fact, bread cooked in a steam oven tends to have perfectly crusty bread and deliciously soft crumb on the inside. Using a NEFF oven with Added Steam or Steam Inject can ensure your slow-cooked recipes maintain a juicy, tender interior and you’ll see minimal shrinkage or liquid loss throughout the cooking process.

4. Warm your plates

5 essential baking tips and tricks you need to know
1. Use dental floss for even cakes
We know how this sounds odd, but trust us. When you bake two cakes in an oven at the same time and need to stack them, the one that’s underneath will often end up flat, while the one on top will end up a bit rounded. Once the cakes are baked and cooled, use unflavoured dental floss to cleanly cut the top of the rounded cake so it’s levelled out and the same height as the flat one. This makes stacking and icing much easier, as both cakes are the same height and are nice and flat.
But if you have a NEFF oven with Circo Therm®, you can save the floss for when you brush your teeth. Why? Well, the Circo Therm® allows for an even cook across multiple dishes – including multiple pans of Victoria sponge cake. But if (and it’s a big if) one cake looks slightly taller than the rest, pull out your trusty dental floss and even it up.
2. Know your oven
No two ovens are the same – some ovens run a little hot, while others can operate on the cooler side. Investing in a thermometer can go a long way with your baking, as you can easily check the temperature while you cook and adjust as required.

By using these pre-heated bases, you can bake your base quicker so that the liquids of your pie don’t soak the bottom.

Chicken enchiladas
Roughly dice the tomato and place on a universal tray lined with baking paper. Add the diced onion, olive oil, chilli. Add half of the garlic, smoked paprika, cinnamon, salt and allspice. Place on level 3 of the oven.
Use the remaining spices to coat the chicken then place on a wire rack on level 4 of the oven.
Using the MultiPoint MeatProbe insert it into the largest chicken and set the core temperature to 70 degrees on CircoRoast and add a high level of added steam. Start from a cold oven. Once cooked remove and cool the chicken, then shred or roughly chop.
Place the rice into a steamer tray with the water, washed kidney beans and a teaspoon of salt. Steam for 20 minutes then cool and add to the chicken.
Place the tomatoes into a medium mixing bowl and using the back of a spoon mash the tomatoes until they become a saucy consistency. Roughly chop half the coriander and mix into the sauce, then divide into thirds.
Place the first third onto the bottom of a baking tray, mix the second third into the chicken and rice, use the last third to dip the tortillas into before adding the chicken mix and rolling up.
Once you have prepared the tortillas lay all the enchiladas seam side down into the baking pan and pour any remaining tomato sauce over the top, then add the tasty cheese and mozzarella. Place back into the oven on top and bottom heat and bake on 200 degrees for 15 minutes or until the cheese has browned.
Remove from the oven and serve with dollops of sour cream and the remaining coriander over the top.
