Rolled Cranberry and Pistachio Stuffed Chicken
Heat in a frypan over FlameSelect® level 8 or Induction level 8. Add the oil and bacon and cook for 2 minutes. Add the onion and garlic and cook until onion is softened and golden. Add the thyme leaves and cook for a further minute. Allow to cool.
Preheat oven on CircoRoast to 180⁰C with a medium level of steam. Top enamel tray with wire rack.
In a medium bowl, combine the cranberries, pistachio nuts, parsley, zest, breadcrumbs, egg, orange juice and cooled bacon mixture. Season well with salt and pepper. Mix until well combined, then press the stuffing into a large sausage the length of the chicken.
Lay the chicken out flat and even out the meat. Place the stuffing in the centre of the chicken, roll up the chicken over the stuffing and tie the roll firmly at 2cm intervals with string. Carefully lift the chicken on to the prepared wire rack. Brush with extra oil and season with salt and pepper.
Insert MultiPoint MeatProbe fully at one end of chicken, horizontally into the centre of the stuffing. Place chicken into the oven on shelf level 2 and connect probe. Adjust internal core temperature to 70⁰C and press Start. Cook until core temperature is reached. If a probe is unavailable, cook chicken for approximately 1 hour or until chicken cooked and golden.
While the chicken is cooking, make the cranberry sauce. Combine all of the sauce ingredients into a medium saucepan. Heat sauce over Flame Select level 7 or Induction level 7. Cook sauce for 10-15 or until the cranberries have softened and the sauce is syrupy. Turn off heat, pour in brandy, cover with a lid and allow the stand. Serve warm or at room temperature.
When chicken is cooked wrap in aluminium foil and allow to rest for 15 minutes or refrigerate if eating cold. Cut the chicken into 1 cm slices, arrange on a serving platter and serve with cranberry sauce.

How to cook Chinese food

With a bit of time on your hands, you can pair them beautifully to make home-cooked meals that would shine on any Chinese New Year menu – from steamed dumplings to noodle dishes and finger foods.
Leafy greens
Wombok is strange-looking cabbage-like vegetable that gives a delicious textural crunch to any dish. It’s best served raw and sliced (as you would for a coleslaw) but also takes on a rich flavour when lightly fried with ginger, chilli and garlic.
Chinese broccoli comes from the same world as your pak choy, bok choy and spinach families – a soft leafy vegetable that just needs a light fry to wilt and leave your guests wanting more.
Kohlrabi is a beetroot-looking root with delicious leafy greens growing out of it. With the texture of broccoli and a unique flavour that shines when served raw or steamed, don’t go past this purple or green bulb the next time you see it.
Melons
Bitter melon tastes, as its name suggests, quite bitter. But with a bit of clever cooking – take the seeds out, cut and salt the flesh to soak up the bitter juice, and stir-fry with chilli and garlic – it’s a delicious, tender treat. Plus, it’s packed with nutrients (from potassium to vitamin C), and believed to help with blood sugar and liver health.
The hairy melon is a little more familiar – sort of like an enormous zucchini. Also known as a fuzzy melon or wax gourd, the delicacy is hard to find and best cooked fresh from the market. The seeds can stay in, but the flesh needs to be ‘rubbed’ with a knife to remove the hairy exterior. It’s delicious mixed with a pork stir-fry.

In any pantry, there are some staples that any home chef would keep on hand in order to bring any dish to life. Why not add some Asian flavours to the mix – perfect for whipping up Chinese food that tastes authentic and delicious with minimal effort.
Soy sauce, chilli and oyster sauce are firm favourites in any Chinese recipe book. Plus, no Chinese feast would be complete without some fresh ginger and garlic – buy them whole to get the most flavour and nutrients out of them.

Clean your kitchen as you go
When it comes to cleaning your appliances, it’s always easier to do it when the spills are fresh. Stay on top of your cleaning with every cook and you’ll find it easier to keep your appliances looking like they just walked out of the showroom.

Don’t ignore descaling with steam products
Descaling is an important part of appliance maintenance when there are water elements involved – such as our steam ovens or coffee machine. The frequency with which your appliance will need to be descaled depends on the hardness of your water, but your appliance should remind you if it needs to be descaled and functionality will be limited until the cycle is complete.
Set a reminder for deep cleaning

Almost-buffalo Chicken Wings
With a spicy tomato dipping sauce and a touch of crispy coconut, these crumbed chicken wings are calling your name. Great for dinner with a fresh salad to complement, or served buffet-style at your next barbeque, they’re surprisingly easy to make (and even easier to eat).
Eggplant in Coconut Mustard Curry
Place the eggplant pieces in a sieve and sprinkle the salt and turmeric on top and rub it well on the eggplant. Leave it aside for an hour to help get the excess moisture out.
Place them on paper towel and rub off all the excess moisture. Fill a pan 1/3rd with oil and once it reaches 190°C gently fry the eggplant pieces in it until golden on medium to high heat. This might take 4-5 minutes and will have to be done in batches. Now in the same oil fry the potatoes as well, until golden.
To make the curry heat the oil in a pan and add the cumin, mustard and fennel seeds. Let them sizzle for a few seconds and add the onions. Once they start to turn golden add the ginger, chilli and cook for minute before adding the spices, mustard and coconut milk. Bring it to a boil.
Now add the fried eggplant and potatoes to it and cook for 2 minutes. Serve it hot with some coconut rice. View our rice recipe here.

Fried salmon with curried almonds
Although it might seem strange to pair nuts and a curry recipe with fish, this dish is packed with perfectly balanced flavours and textures. The curried almonds give the salmon a burst of complexity, and pair beautifully with a delicate mix of fresh coriander and spring onion. Lime and ginger glazed salmon
Served with a side of coriander rice and steamed greens, this Asian-inspired salmon dish is full of colourful flavour. What type of rangehood do I need?
Many people think that you only need a rangehood for your cooktop in the event that something gets burnt. However, rangehoods are essential for keeping the air you breathe clean while you’re in the kitchen, and preventing a build-up of steam and grease on your kitchen cupboards.

Classic Potato Salad
Place egg in the perforated stainless steel tray and place in FullSteam oven. Select Steam Programs > Speciality Dishes > Soft Boiled Egg and press start. Allow egg to cool for 5 minutes.
Place potatoes on the large perforated stainless steel tray and place in FullSteam Oven. Select Steam 100⁰C and cook for 20 minutes or until cooked. Rinse potatoes with cold water and allow to drain and cool.
In a bowl of a small food processor add the mustard, lemon juice and water. Carefully remove the shell from the egg and place only the egg yolk into the food processor bowl. Blend to combine and with the motor running slowly add the oil. Season to taste with salt and pepper. Set aside.
Preheat oven on Grill, large area to 250⁰C. If using the FullSteam oven, wipe oven interior to remove excess water. Place wire rack on the enamel tray and grill bacon until golden and crisp, cooking on both sides. Allow bacon to cool on paper towel.
In a large serving bowl add the shallot, herbs, cornichons, capers and potatoes. Dress with as much of the mayonnaise as you like and stir until well combined. Roughly chop bacon and top salad.

Where are the NEFF demonstrations held?
There are demonstration locations throughout the country, and you can search for one near you on our demonstrations page. They’re held at varying locations, including our new NEFF Showroom in South Melbourne Victoria to the test kitchens of our retail partners.
Who runs the NEFF demonstrations?
When you attend a NEFF demonstration, a cooking specialist and NEFF enthusiast will be your guide. Each of our demonstrators is an experienced cook, with a passion for cooking that shines through in all of their recipes.
How long are the demonstrations?
Your demonstration will run for two to three hours, but don’t worry, you’ll be well fed during that time.
Can I just turn up?
Our official product demonstrations have strictly limited spaces, so it is essential that you reserve your place. However, some of our retail partners have set times where a NEFF expert is available in-store. These are not actual product demonstrations, but a chance for you to quickly speak to an expert or ask your burning questions.
