Chilli Thai chicken cakes and sweet lime dipping sauce
For the chicken cakes, combine mince, chilli, ginger, shallots, coriander, chestnuts and fish sauce in a medium mixing bowl; mix until well combined. Using wetted hands shape the mixture into 20 round flat patties. Place a coriander leaf on each patty. Place onto perforated steamer tray that has been lined with baking paper. Cook on 100°C FullSteam for 10 minutes or until cooked through.
Meanwhile, make the dipping sauce by mixing together all the ingredients in a small bowl.

Middle Eastern chicken with apricots
Mix salt, cumin, pepper and turmeric together in a large bowl. Add chicken pieces and toss well to coat.
Turn on flexInduction to 9.
Heat olive oil in a large heavy-based pan over front section of induction. Add chicken pieces and brown for 5 minutes or until golden brown. Remove and set aside.
Move pan to middle section of induction.
Add onion, ginger, garlic and any remaining spice mix to the pan and cook for 3 minutes or until softened. Add saffron threads, thyme and wine.
Move pan to front section of induction. Bring to a simmer; add stock, chicken pieces, apricot halves, lemon juice, zest and honey. Pour over enough water to cover chicken and bring to the boil.
Move pan to back section of induction; cover with a lid and simmer for 10 minutes. Uncover and simmer for a further 10–15 minutes or until the chicken is tender and cooked through and the sauce is slightly reduced. Stir through the pistachio nuts and serve with couscous.
Tender Chicken
Preheat the oven to 180˚C CircoTherm®.
Lay all the prepared vegetables on a universal baking tray and sprinkle with olive oil and seasoning. Place the chicken breasts on top of the vegetables and bake in the oven on level 3 with low moisture added for 15 minutes. Remove the moisture and continue to cook for another 10 minutes.
Using a sieve, remove the stock from the tray and bring it to boil in a separate saucepan. Add butter and thyme as it thickens. Pour over the chicken and vegetables before serving.

Blanch - What is blanching?
Blanching is when you cook briefly in boiling water to seal in flavour and colour. You would usually use this technique for vegetables or fruit to prepare for freezing.

Blind baking is when you bake a pie or pastry crust part-way, without the filling (often using weights such as pie weights or uncooked rice to stop it from bubbling up). Once cooled, you would then add the filling and bake the pie or pastry until done.

What is a steam oven?
A steam oven combines baking with steaming in the one appliance. Cooking with a steam oven allows you to add the right amount of moisture to your food without needing to boil water or run the risk of turning your food into watery mush.
Steam ovens can preserve the natural textures, flavours and nutrients in your food and reduce the need for oils in your cooking. They’re versatile appliances and great for many types of cooking, such as baking, roasting or slow cooking.
How do steam ovens work?
Most steam ovens have a water canister or container inside the oven cavity. The water is injected into the boiler through a pump and the heat from the oven turns the water into steam. This steam helps retain the flavours of your ingredients and their nutritional value, while also making your cook perfectly moist and succulent.
What are the different types of steam ovens?
At NEFF, we have two types of steam ovens: Full Steam and Added Steam ovens.
The Full Steam oven allows you to cook food with 100% pure steam, such as fish vegetables, and even individually portioned cheesecakes to perfection. It’s easy to operate and simple to refill the concealed one litre water container.
NEFF’s Added Steam ovens, meanwhile, gives dishes the right amount of moisture by adding steam alongside hot air cooking, which makes this type of oven perfect for baking and roasting. The oven has three intensity levels that provide everything you need to create crustier breads and juicier roasts.
Cooking tip
You can add steam manually to your cook with the Steam Jet function. This gives you more control over how much steam you want to add and when.
Does a steam oven need plumbing?
Both of the NEFF steam ovens don’t require plumbing at all, making them incredibly easy to install. You can access the water reservoir with a push of a button, which makes refilling the reservoir simple and straightforward.
Can you combine a steam oven with other ovens?
While steam ovens can replace a regular oven entirely, some people might opt for a two-oven setup – one steam oven and one regular oven. Incorporating both ovens into your kitchen setup means that you can create and experiment with different recipes that can be enhanced with steam cooking.
With the new Flex Design range, you can have a Full Steam® or Added Steam® plus a standard NEFF oven while creating a sleek and seamless combination. How to build an open plan kitchen
If you like cooking for guests, then why not cook with them instead of being away from them? An open plan kitchen is a great way to ensure you’re always part of the action, not just a cook who moonlights as a waiter.
What is an open plan kitchen?
An open plan kitchen is any kitchen that is not walled off from the rest of the house. But a successful open plan kitchen is a space that seamlessly ‘connects’ to the rest of the house; a sort of pipe which helps daily life flow.
This might involve more than knocking down a few walls. It will require you to rethink the actual layout of your kitchen. For example, does an L-shape or galley work best for your space? To get started, think about where the sunlight tends to fall, how much storage you need, and how people will likely move through and use the room.

5. Let there be (natural) light
Natural light doesn’t always come naturally. To maximise it, you might need some more windows, a few French doors or maybe one or two skylights. Strategically placed mirrors can also help to add dimension and the illusion of more light to a space.
Such additions may seem quite costly at first, but they are nearly always worth it. Natural light is one of the key perks of open plan living: fewer walls by and large tend to mean fewer shadows, lower electric bills, and more serotonin and Vitamin D.
