Christmas Preparation Guide

This is a day for pure indulgence, and we have tried-and-true recipes that will ensure your lunch is a complete success (and that your kitchen will smell like cinnamon, nutmeg, fresh strawberries and warm, buttery-fresh pastry). On the menu   Roast Turkey Glazed Ham Gravy Yorkshire Puddings Classic Potato Salad Pumpkin & Cauliflower Quinoa Salad Pumpkin & Black Bean Salad Mixed Berry Trifle Christmas Fruit Cake Summer Pavlova Gingerbread Shortbread A week to go With one week to go, this is the time to be certain of your menu, to shop for ingredients and to have the correct pots, pans, cookie cutters and utensils you'll require for each recipe. With a week to go, this is the time you can make and bake your gingerbread, Christmas Cake and Yorkshire puddings. The Christmas shortbread, Christmas Fruit Cake and gingerbread can be baked and stored in air tight containers. The batter for the crispy, fluffy Yorkshire puddings can be made ahead, refrigerated and cooked on the day. A day earlier This is the perfect time to make your summery, gorgeously fresh mixed berry trifle, allowing the brandy and jam to soak into the sponge overnight. If you prefer a pavlova, this divine summer pavlova is also layered with juicy, sweet berries with a lighter texture than trifle. This is also the day for making your salad dishes, like the Classic Potato Salad, Pumpkin & Cauliflower Quinoa Salad and the hearty Pumpkin & Black Bean Salad, which is packed full of flavour thanks to the even heat applied by the CircoTherm function. On the day Making sure all your dishes land on the table at the right time is easy with the Flex induction cooktops. They operate intelligently to assess the size and number of pots on each burner, then they heat up accordingly. Making a deliciously rich gravy using the induction cooktop is easy, and you probably already have all the ingredients you need in the fridge and pantry. Simply combine the pan juices from your roast turkey (or meat of choice) with vegetable stock, red wine and butter. You can prepare this in less than 10 minutes with the assistance of NEFF PowerBoost, which enables you to quickly heat your pans before resetting to Level 9 temperature. Keep an eye on gravy to prevent lumps. Depending on whether your turkey is frozen or thawed, cooking time is between 1.5 and 2 hours. The glazed ham has a similar cooking time of 2 hours. Using VarioSteam® and the MultiPoint MeatProbe ensures that your Christmas turkey is flawless. The additional steam  maintains the moisture and flavour of the turkey, and the MultiPoint MeatProbe monitors the internal temperature of your meat, automatically switching off your oven once it’s been cooked to perfection. Fill out your table with bright sides Choosing simple side dishes that maximise flavour and colour is the best way to avoid spending longer in the kitchen than necessary. You can whip up a grilled vegetable salad while your turkey is cooking using whatever vegetables you have at hand: sliced zucchinis, sweet potato, carrots, pumpkin, beans and snow peas are all ideal. Simply preheat the oven on Grill function, give them a spray of olive oil, leave for a couple of minutes then season with salt and pepper to taste. Spending time in the kitchen is part of the Christmas tradition. With intelligent NEFF appliances, cooking for your loved ones is a stress-free experience. Conveniently, NEFF ovens are designed with the CircoTherm function, providing the ability to cook multiple meals at once without any intermingling of flavours, so with careful planning (and matching oven temperatures) you can potentially cook your menu simultaneously on the day if preparation gets away from you.

Kitchen Lighting Solutions: Types of Lighting Explained and Planning Your Space

In order to achieve that effortless effect, it's worth the time to research different lighting options and to understand how they'll work for your kitchen. To make it as painless as possible, we've provided a guide that explains your options and the process of choosing for your specific space, so that spending time in your kitchen feels joyful and relaxing. Choose Multiple Light Sources To create an appealing, peaceful ambience in your kitchen, it's best to combine a variety of light sources. These four types of lighting are ideal for the kitchen: ambient lighting, task lighting, accent lighting and decorative lighting. Here's what you need to know about each type. 1.   Use ambient lighting as a base Ambient lighting, also called general lighting, provides overall illumination for a room and is intended to create a uniform light level throughout a space. It’s the foundational layer of lighting in your space. As with other rooms of your home, it typically originates from the ceiling. Wherever you're likely to walk or stand within your kitchen is where you'll want well-lit space. You may opt for recessed lighting, which is a popular choice, to cover spaces not already lit by pendants or undercabinet lighting. 2.   Add practical task lighting Task lighting provides increased light for specific tasks in a room that may already have some ambient light. Its primary purpose is to illuminate workspaces. Whether you're slicing up cucumber or grilling eggplants, you don't want to be working in dim lighting. Consider where you're working and what the source of light is above you. While your countertop is key, undercabinet lighting is also useful to the functionality and the ambience of your kitchen. Sometimes, appliances have intelligent lighting built into their design, such as the NEFF integrated and slideout rangehoods that use energy efficient LED lighting. 3.   Use accent lighting for dining Accent lighting highlights a particular area or object, for example a piece of artwork. Common types of accent lights include wall sconces, floodlights, recessed lights, torchère lamps, or track lighting. Having laid the foundations to ensure your space is lit for safety and functionality, accent lights are the design flourish. Commonly, accent lighting is placed above an open countertop, such as an island, the kitchen counter, or the dining table in open plan kitchens. The rule of thumb is to place the light 30 - 36 inches from the surface, but this can be adapted to your height. You might opt for a pendant, a directional downlight or a sconce. Depending on your design aesthetic, you might combine various bold options, or take a minimal approach and blend the lighting into the existing palette of your kitchen. 4.   Customise your space with decorative lighting Used to create mood and/or interest in a room, decorative lighting enhances aspects of your space. Design begins with your floorplan. Since you have likely already planned your foundational lighting, decorative sources of light are used to contour the space and play up the textures and colours of your furnishings. This is where you'd play with the idea of pendants, linear suspension lighting or chandeliers (why not?). Positioning for perfection To ensure that you've got clear vision of your space, and to complement the colours and textures of your kitchen, the right placement of your lighting is fundamental. Pay attention to the height of your cabinets, pantry and benches to ensure your lighting highlights these surfaces and adequately lights the full space. As a general rule, lighting should be placed 12 inches away from tall elevations, such as your fridge or cupboards, to ensure it isn’t obstructed and sheds light. In galley-style kitchens or around an island bench, single rows of spaced recessed lights are a good choice. The spacing depends on the height of your ceiling and the strength of the lighting. Point In the right direction Consider the orientation and sources of natural light in your kitchen and how this changes over the day. North-facing rooms are likely to get little light; east-facing rooms receive less light in the afternoons; and south and west-facing kitchens tend to stay light well into the afternoon. Where  do you need the light when you're in the kitchen? Focus on how to best light those areas. When you're whipping up fudge brownies, inhaling the steam from a fresh brioche, or putting your groceries away, you'll want lighting over the cooking area, the cleaning area and the food preparation area.   Shapes and Textures The most creative aspect of lighting is in your chandeliers, pendants, cord lighting and lamps. There's so many options available that it is impossible you won't find something to suit your tastes: geometric forms, round, textured brass, smooth ceramics, organic materials and fabrics, pastel or bold colours. The options are endless! Take into account the overall colour scheme and the fabrics and textures you've already used when deciding upon your fittings, but don't be afraid to make a statement with colour and shape. Intelligently lit kitchen appliances Is there anything more tiresome than having to open the oven to check on your meal? Intelligent built-in lighting means you no longer need to spoil your cooking in your search for light. NeffLight is located in the oven door, which helps to evenly distribute light so that you can view every corner of the oven. Some of the rangehood models, such as the NEFF integrated rangehood, have a convenient dimmer function, while the NEFF slideout rangehood and the NEFF integrated rangehood use energy-efficient LED lighting. With better lighting built into your kitchen appliances, you can better prepare your food in all lighting conditions.

Baked Eggs and Beans

Place onion, garlic and olive oil in a saucepan. Cook on Induction level 7 or level 7 on a FlameSelect® gas cooktop for 3-5 minutes or until onion is soft and lightly golden. Add the paprika, cumin and chili flakes and cook for a further 2 minutes. Add the tomatoes and cannellini beans and stir to combine. Reduce heat to level 5 and cook sauce for 8-10 minutes or until it has thickened. Remove from the heat and stir through half of the basil. Add enough honey to round the acidity of the tomato and season with salt and pepper. Preheat oven on CircoTherm® to 180°C with a low level of added steam. Grease 4 x 12 cm shallow ramekins. Spoon sauce evenly into the dishes.  With the back of a spoon make an indent into the sauce. Crack an egg into each dish. Place dishes on the universal tray and cook in oven for 10 minutes or until eggs are cooked to your liking. Serve the baked eggs and beans with toasted slices of sourdough bread.

Mini Coconut and Coffee Bundt Cakes

Grease 12 mini bundt pans. Preheat oven on CircoTherm® to 170°C (see notes if you have an added steam oven). Cream butter, sugar and vanilla until light and creamy. Add eggs one at a time. Fold in the coconut milk, coffee, flour and coconut alternatively. Put batter in a pipping bag with no nozzle and pipe evenly into pans. Bake for 15 minutes or until cooked. Turn out cakes onto a wire rack. Make coffee icing by mixing icing sugar, coffee mixture and enough water to make a pouring consistency. Pour over bundt cakes and sprinkle with a little shredded coconut.

Sticky Miso Chicken with Eggplant

Combine the ingredients for the marinade in a large bowl and mix well. Trim the thigh fillets of any excess fat and halve. Cut the eggplant in half then cut each half into 4 wedges. Place the chicken and the eggplant into the bowl, toss well to coat and allow to marinate for 1 hour. Preheat the oven on CircoRoasting® to 200°C. Line the universal tray with baking paper and arrange the chicken in a single layer on the tray. Sprinkle with the sesame seeds. Line a separate tray with baking paper for the eggplant. Place the chicken on shelf position 4 for and the eggplant on shelf position 3 and cook for 16 to 18 minutes or until the chicken is cooked and golden. Remove the chicken, then move the eggplant to shelf 4 and cook for a further 3 to 5 minutes or until the eggplant is golden. Place the rice into a strainer and rinse well under cold running water. Drain the rice then transfer to the solid stainless steel tray and add the water. Place into the oven and select FullSteam 100˚C and steam for 18 minutes. Alternatively, if you don't have have a steam oven. Cook your rice on your cooktop. Serve the chicken and eggplant with the sushi rice. This recipe can also be served with steamed greens.

Dark Chocolate Cinnamon Rolls

Start with the rolls. Add the flour and sugar to a large bowl. Add the salt to one side of the bowl and add the yeast to the other side (yeast doesn’t like direct contact with salt). Set aside. Pour the milk into a jug and add the butter to the jug, heat in the microwave until the butter has melted and the liquid is very warm, but not boiling (around 60-90 seconds). Add the milk to the flour mixture, then give it a stir with a wooden spoon and add in the egg. Give it all a good mix with your hands and then tip out onto a lightly floured surface and knead for about 5 minutes. It will be sticky, but try not to add more flour as it will make the buns tough. Alternatively, you could knead using an electric mixer with a dough hook (mixing for 5 minutes). Gather the dough into a ball and place in a bowl that’s been lightly greased with olive or vegetable oil. Cover with cling film and leave to rest for 10 minutes. Now make the filling. Peel the apples and finely chop, then place in a bowl and stir in the lemon juice (to prevent the apples from browning). In a separate bowl, mix together the sugar, cinnamon, allspice, cloves and ginger. Grease a rectangular large (35cmx23cm) baking dish with butter or oil. Roll out the dough on a lightly floured surface into a 30cmx45cm rectangle. Spread the soft butter all over the dough – right up to the edges. Sprinkle on the spiced sugar, to cover the butter. Spoon on the apples in an even layer, right up to the edges too. Roll the dough into a 45cm long roll. Use a length of cotton or a very sharp knife to cut the ends off the roll, then cut the roll into 12 even slices and arrange in the baking dish (3 by 4). Place in the oven and use the bread proving function to prove the rolls for 30 minutes. They should almost double in size during this time. Once proved, remove from the oven and preheat the oven to CircoTherm® 175°C with power boost. When the oven is at temperature, place the rolls in the oven and turn on low steam. Cook for 10 minutes, then turn off the steam and reduce the temperature to 170°C. Cook for a further 10-15 minutes until browned. Once the buns are cooked, leave to cool for 15 minutes – during which time you can make the topping. Place the chocolate in a pan with the butter and heat at induction setting 2, stirring often, until the chocolate has melted. Stir the icing sugar into the mixture using a hand whisk, then stir in the boiling water, a little drizzle at a time, stirring with the whisk, until you get to the consistency of custard. Drizzle the chocolate sauce over the apple cinnamon rolls and serve.

No Knead Bread

In a large bowl combine flour, yeast and salt. Add water and stir until just combined; this is best done with hands. The dough should be sticky. Cover the bowl with plastic wrap and rest dough for at least 12 hours at room temperature. The dough is ready when the surface is covered with bubbles. Lightly knock down dough and knead lightly to make a ball. Dust a tea towel generously with flour or rice flour and place dough in the centre and gently lift into a bowl. Lightly dust the top of the dough and cover with a second tea towel. A floured banneton (cane bread basket) can be used to prove the dough. Let the dough rise for 1-2 hours, dough is ready when it has doubled in size and does not spring back when pressed. Preheat oven on Bread baking at 240°C with a high level of added steam (VarioSteam). Carefully remove the top tea towel and quickly flip the dough onto the universal tray lined with baking paper. If using a banneton, turn banneton over and allow to release from cane surface. With a sharp knife or blade score the top of the dough. Cook for 15 minutes. Then reduce oven temperature to 220°C and turn off VarioSteam, cook for a further 15 minutes. Turn off oven and allow to cool in oven for 10 minutes. Allow bread to cool on a wire rack before slicing.
