The best ways to enjoy fresh fruits this winter
Winter’s cold snap deters many plants, but there are some that the icy months are quite fruitful for. Staples like apples and pears are coming into crop and citrus fruits like mandarins and nectarines are ripe for the picking. But you don’t have to have them as is — there are a number of ways you can heat up your winter fruits and we’ve got a few that will become the apple of your eye.
Steamed Pears with Chocolate Sauce
This is a treat that will warm the soul. Pears are cooked on FullSteam at 100°C for 15 minutes in a syrup with vanilla seeds and cardamom pods, and then served doused in chocolate sauce. Beurre Bosc or Williams pears are the best to use for this recipe - and slicing off the bottoms will give them a solid base to stand in their syrupy bath.

Roasted Nectarines (or Peaches)
Another quick and easy dessert with roasted fruit, this recipe is simple and requires few ingredients. You’ll be making a caramelised sauce from palm sugar, coconut milk and ginger, which you’ll then drizzle on CircoRoast-ed fruit. (If you’re not feeling that combo, you can replace with our sweet cherry syrup.) You can use nectarines, peaches, or both, and you can add a cool kick with vanilla ice cream.

Winter Curries
If you’re looking to master curries, our chicken korma recipe is a great place to start. The standard recipe serves four-six, which you can stretch by doubling the ingredients. Family Sized Pies
If ever there was a time you could chow down on pie without guilt, it’s winter. The meaty version is about as comforting as comfort food gets, but there are a host of ingredients you can get brewing under that pastry lid.
The first on our list is a staple: beef and mushroom pie. The beef mixture in this one incorporates Dijon mustard and star anise and is bound with a little corn flour or tapioca starch. You can use store-bought puff pastry to save time, but doubling the ingredients would call for larger sheets and cooking pots. We advise that you cook double filling but cook your final pies in multiple batches or dishes.
For something a little different and with a lot more greens, our layered vegetable pie is the way to go. Building up slices of overlapped sweet potato and eggplant slices is the trick, and will make for filling, nourishing portions. Home cooks love this one for guests because of the salad topping, which combines shallots, ricotta and basil for an element of freshness. It’s best not to tinker with this recipe’s volume, but with a serving size of six-eight you’ll still have enough for tomorrow’s lunch. Just make sure you save some of the topping too.
Winter Roasts
Roasts are the meal prepper’s favourite dish because they’re so versatile. Instead of going back to the same dish throughout the week, you’re able to take the meat and change it on the fly. Roast chicken salad? Done. Roast beef sandwich? Even easier.

Sushi Rolls
Place the rice into a strainer and rinse well under cold running water.
Drain the rice then transfer to the solid stainless steel tray and add the water.
Place into the oven and select FullSteam 100˚C and steam for 20 minutes.
Place the cooked rice into a glass bowl. Using a wooden spoon or a rice paddle gradually stir in the sushi seasoning and mix well. Stir the rice regularly as it cools to break up any lumps and prevent the rice from becoming gluggy.
To assemble your sushi rolls, place a nori sheet, shiny side down onto a bamboo sushi mat.
Using wet hands spread with one quarter of the rice leaving a 3cm border along the edge furthest from you.
Arrange the selected fillings along the centre of the rice.
Holding the filling in place, roll the mat firmly over to enclose the rice and filling.
Repeat with remaining nori, rice and filling. Using a sharp knife, slice each roll into six pieces.
Serve with soy sauce.

Tandoori Chicken with Roti Bread
Make deep incisions into the chicken breast fillets with a sharp knife. Combine the tandoori paste & the yogurt in a medium bowl. Add the chicken and turn to coat well.
Preheat oven on CircoRoast to 200˚C with medium steam. Line the universal pan with baking paper and place a wire rack on top. Insert the MultiPoint MeatProbe horizontally into the largest chicken breast. Place the tray on shelf 4 and set the probe to 71˚C (see note if you do not have a MeatProbe).
When the chicken is cooked, remove from the oven and allow to rest for 10 minutes.
While chicken is resting, pan fry the roti breads. Arrange the salad greens and cucumber on the roti bread. Top with sliced chicken and remaining ingredients.

How to Ripen Bananas
Before you jump into cooking with bananas, first thing’s first: what if your bananas aren’t ripe? If your bananas are in their salad days, green in hue and firm in peel, don’t stress. You have options. One is to harness chemicals (the beaker-free, natural kind) like ethylene and amylase. Bananas already produce ethylene gas as they ripen, and putting them in a paper bag with another fruit that emits the ageing vapour, like apples or avocados, will hasten browning. Amylase breaks down starchy bananas and can be found in raw egg yolks. Just mash a yolk through bananas once or twice over a period of 30 minutes and you’ll have ripened fruit perfect for the following recipe.
